The Main Ingredient Of Corfu’s Dishes:

1. Pastitsada – This traditional Greek dish is a staple of Corfu cuisine and features chicken, beef or pork simmered with red sauce made from tomatoes, bay leaves, cinnamon, cloves, olive oil and red wine vinegar. The sauce is served over a bed of pasta, rice or potatoes.

2. Sofrito – This classic Corfiot dish is made from braised veal or beef cooked in white wine and tomatoes with garlic, onion and the island’s famous olive oil. It’s usually served with a side of spaghetti, potatoes or rice.

3. Stifado – A lamb, beef or rabbit stew cooked with onion, garlic and a tomato-based sauce. Corfu’s stifado is often enriched with cinnamon, bay leaves, cloves and its regional red wine vinegar.

4. Savoro – This traditional fish dish is made from either snapper or John Dory fillet cooked with white wine, tomato sauce and plenty of garlic. It’s usually served with boiled potatoes or rice.

5. Bourdeto – A delicious seafood dish that combines the freshness of Corfu’s waters with a spicy tomato-based broth made from olive oil, onions, peppers and bay leaves. This stew is normally prepared with a variety of fish and shellfish.
